Simple Recipes For The Best Outdoor Parties

Fast entertaining recipes and meals for your outdoor parties should be simple, easy and, most importantly, delicious.  Keep your outdoor parties relaxed and your guests well-fed.  Here are some amazing recipes to spice up your summer outdoor party menus:

Grilled Peppered Tenderloin with Chopped Salad
Cook things ahead of time to stay prepared!

One 3 1/ lb trimmed beef tenderloin roast, tied with a buther's twine
1/4 cup very coarsely ground black pepper
salt
vegetable oil
6 plump oil-packed anchovies, minced
2 1/2 tbl freshly squeezed lemon juice
1/4 cup plus 2 tbl extra-virgin olive oil
Salt & freshly ground black pepper
5 ounces baby arugula, chopped
1 head of Bibb lettuce, coarsely chopped(6 cups)
1 cup coarsely chopped flat-leaf parsely
1/2 cup coarsely chopped celery leaves
2 tbl coarsely chopped tarragon

1. Light the grill.  Cut your tenderloin in half across and rub each piece with pepper.  Season with salt and rub with the vegetable oil.
2.  Grill the tenderloin until it's lightly charred approximately 8 min.  Move the tenderloin to a cool part of the grill.  Cover it and cook it for 35 min, until the thermometer reads 120 degrees in the middle.  Let it rest for at least 30 min.  Take off the string and slice thinly.
3.  In a bowl, whisk the anchovies with lemon juice and olive oil and season with salt & pepper.  Add arugula, lettuce, parsley, celery leaves and tarragon and toss.  Serve with the meat.
